How do I make one chicken breast fillet feed my whole family?
I have one chicken breast fillet in the freezer left over from something else. Instead of buying more meat I want to make this one chicken breast fillet feed a family of four. How do I do it? Obviously, the trick here is to cut up the chicken and use it as more of a flavouring in a dish with lots of veggies and other filling ingredients.
Chicken and Vegetable Stir Fry
Cut the meat into strips and stir fry with loads of veggies and oyster sauce. Serve with rice.
Chicken and Pasta Salad
Poach the breast whole, then slice it and use in a pasta salad with pasta spirals, tomato, fresh herbs, avocado, currants, silvered almonds, olives and fetta cheese.
Dice it and cook in frying pan before adding it to a jumble with rice or spelt and veggies.
Risotto with Chicken Breast Fillet
Use the thinly fried strips as topping on a herb risotto.
Chicken Noodle Soup
Poach the meat and reserve liquid. Dice the cooked meat and return to pot with extra homemade stock, diced capsicum, carrot, corn, peas and soba noodles. If you are feeling adventurous – or have kids who love spices – try turning the soup into a chicken breast fillet and vegetable laksa with a bit of curry paste and coconut milk.
Chicken Gado Gado
Make a salad with cucumber, carrot, tomato, thinly sliced chinese cabbage, snow peas, bean sprouts and hard boiled eggs. Cut the chicken into strips, stir fry and add to salad, then top with Satay sauce.
Add to an otherwise hearty vegetarian curry – and voila, no one has an excuse not to eat it!
