I love black beans. They are versatile, full of protein and absolutely delicious! It’s so simple to prepare them from dried beans. Soak 1 cup of dried beans in 3 or 4 cups of water over night. It’s fine to leave them soaking on the bench in winter, but I put them in the fridge in summer. I’ll soak them for up to two days if I get too busy to cook them when I am first expecting to. When it’s time to cook them, drain off the soaking water then put the soaked beans in a large pot with 3-4 cups of fresh water. Bring the pot to the boil, then simmer gently until beans are soft, but not mushy. I find this usually takes 30-45 minutes. In this recipe, I use tinned black beans to save time!
