Beetroot relish
This amount makes 4-5 medium jars of relish – some for you and some for gifts. For a smaller batch, adjust the setting in the recipe down to one jar and the quantities of the ingredients will adjust too. It may take less time in the pot, though.

  1. Grate the beetroot, onion and apple. It’s worth doing this in a food processor because it’s very messy! Use gloves if doing this by hand.
  2. You’ll need a large heavy-based pot over a medium heat to start. Add fennel seeds to pot and dry-roast them for a minute or two until fragrant.
  3. Add onion and sautee gently until they soften. Then add the rest of the ingredients and mix well.
  4. Bring mixture to the boil then reduce to a simmer. Simmer until liquid thickens and is almost all gone (45 minutes to an hour). Stir occasionally.
