Turmeric coconut rice recipe
A subtly flavoured accompaniment to any main meal – with plenty of turmeric goodness.

  1. In a medium sauce pan that will fit all the ingredients heat the oil over a medium heat.
  2. Add onion, ginger and garlic. Sautee gently until onions soften (around 5 minutes).
  3. Add rice, turmeric and salt and stir until ingredients are well mixed. Allow to cook for a minute longer.
  4. Add remaining ingredients, cover and raise heat to bring mixture to a boil.
  5. Once boiling reduce heat to low and allow to simmer until all liquid absorbed (about 15 minutes). Then remove from heat and stand for 5 minutes.
  6. Fluff with a fork and serve with chopped coriander or toasted coconut.
