Mango Salsa for every occasion
This simple salsa is great with any kind of grilled meat, as a topping for a salad or as an accompaniment to curries.

  1. Chop mango into a large dice buy slicing off the ‘cheeks’, scoring them and turning the skin inside out, then slicing of the cubes of flesh. Place the mango in a small bowl.
  2. Chop each cherry tomato into quarters and add to mango.
  3. Thinly slice spring onions and add to mango.
  4. Chop coriander finely. Add to bowl with mango, tomato and onion.
  5. Juice lime and place juice in a small jar. Peel garlic clove and squash with the back of a knife.
  6. Add whole squashed garlic clove, along with olive oil, salt and sugar to lime juice. Screw on lid of jar and shake well. Taste – and add more seasoning, lime or oil according to your taste. Remove garlic clove before pouring over other ingredients.
