Slice or dice everything into pieces about the size of a small playing dice.
Slug some oil into a large cast iron casserole pot and gently cook all the fresh vegetables that aren’t leafy greens. You want to cook them until they slightly softened. It should take about 5 minutes, depending on how much there is.
When they have cooked down a little, add the tinned tomatoes, water or stock, beans and grains. Season with salt and pepper. Simmer for 30 minutes or all afternoon, if you have the time!
Just before serving mix through the green vegetables and cook for another 1-2 mins.Serve with crusty bread!
