Honey and turmeric complement each other beautifully. I had been thinking about how I wanted to combine the two this month. Then I looked at a butterflied chicken carcass I had in the fridge and thought “bingo!”.
I love that the honey in this recipe chars well on the BBQ and makes those really nice ‘grill marks’ on the meat. I am also pretty pleased by the way the chilli oil adds a lingering heat to the meat without it being too hot.
You can prepare this in advance and don’t need to pay it too much attention while it cooks. Cut into pieces this is a perfect dish to serve on a platter to friends and family on hot summer nights.
