I’ve previously disclosed that this vegetable recipe is what I would eat if I could only eat one thing everyday for the rest of my life. BUT the following sauteed rainbow chard recipe is a strong rival for that title! It is great by itself, but I like it served with some poached or soft boiled eggs and a few walnuts for crunch.
This recipe for sautéed rainbow chard (also called five coloured silverbeet) is one of the most popular dishes at the workshops I teach. I am always surprised that people love it so much. Not because I don’t think this is a delicious vegetable, but simply because it is so easy! A little butter and garlic make it more ‘meaty’ for dedicated carnivores and using the five-coloured version makes it easy to rebrand as a “rainbow” dish for kids who need that kind of encouragement.
